Rolf Binder er en vinproducent, der producerer meget fine vine fra Barossa Valley, ca. 80 km nordøst for Adelaide, Australien. Det har været et familieforetagende siden 1955, startet af Rolf Heinrich Binder, der var emigreret fra Østrig. Nu fører sønnen Rolf Binder og datteren Christa Deans i 2. generation familietraditionen videre og producerer nogle af de bedste vine fra regionen. Rolf Binder har specialiseret sig i rødvine og Christa Deans i hvidvine. Søskendeparret har arbejdet sammen i mere end 25 år og er begge højt ansete for deres evner inden for produktion af vine af høj kvalitet.

Tasting Note

Veritas Winery was established in 1955 by Rolf Heinrich Binder. In 2005, on their 50th Anniversary, Veritas became Rolf Binder Wines. The winery tradition is now continued by Rolf and Christa, as brother and sister winemakers. The philosophy of all Rolf Binder Wines is to let the vineyard tell its own story.

THE VINTAGE:
The 2017 vintage wrapped-up four to six weeks later than the ‘new normal’ of the past decade, the growing season started after a long wet winter and one of the wettest Septembers on record. 2017 promises to deliver an exciting array of wine styles, from “bright, aromatic wines”, through to “vibrant, intense, well-structured” and “dense, concentrated” wines from the Barossa’s many diverse sites.

THE VINEYARDS:
A collection of Binder Estate Barossa Valley vineyards in the Stockwell, Vine Vale and Western Ridge subregions contributed fruit with varying characteristics, adding a nice complexity to this wine. The vineyards in the northern region of the Barossa are known for adding depth and weight to a wine, while the vineyards in the Western area give the wine power and great length.

THE WINEMAKING:
The Cabernet Sauvignon and Merlot are fermented in open fermenters. Selected Bordeaux-style yeasts are added. The juice was pumped over twice daily, resulting in maximum flavour, colour and tannin extraction with both the warm ferment and pumping over stabilising tannin structure. The wine was matured in a mix of 10% new French oak, with the balance being older shaven French and Amercian oak barrels. Maturation time was 12 months with the final blend being 60% Cabernet Sauvignon and 40% Merlot.

The PROFILE:
Complex flavours abound in this medium bodied wine with soft gentle tannins, and a long lingering finish. The longer growing season has given a style with more intense flavours, retaining good amounts of blackcurrant syrup aroma and a balanced palate. The varietal back-up from the richer plum fruits of the Merlot gives this very drinkable blend a bright fruit lift.
