Druerne til denne vin kommer fra to forskellige vinmarker. Vinen er delvist modnet i egefade (20%) og delvist i tønder af rustfri stål og derefter blandet. Dette er for at give vinen en mere kompleks smag og en cremet, næsten smøragtig, karakter.

Denne Chardonnay har aromaer af bløde hvide ferskner og med et hint af tropiske frugter. Den delvise modning i egefade giver vinen lidt kant og en dybere smag, dog balanceret med frugtige noter. 

Rolf Binder - Selection Chardonnay 2018

Rolf Binder er en vinproducent, der producerer meget fine vine fra Barossa Valley, ca. 80 km nordøst for Adelaide, Australien. Det har været et familieforetagende siden 1955, startet af Rolf Heinrich Binder, der var emigreret fra Østrig. Nu fører sønnen Rolf Binder og datteren Christa Deans i 2. generation familietraditionen videre og producerer nogle af de bedste vine fra regionen. Rolf Binder har specialiseret sig i rødvine og Christa Deans i hvidvine. Søskendeparret har arbejdet sammen i mere end 25 år og er begge højt ansete for deres evner inden for produktion af vine af høj kvalitet.

Den er lavet til at blive drukket, mens den er ung, men kan dog ligge op til 10 år.

Tasting Note

Rolf Binder, formerly known as Veritas, was established in the heart of the Barossa Valley in 1955 by Rolf Heinrich Binder. The winery tradition is now continued by the second generation of Binders, Rolf and Christa, as brother and sister winemakers. For more than 25 years, the siblings have produced a range of highly acclaimed wines from their estate and other premium Barossa vineyards.

THE VINEYARDS:
The fruit for this wine comes from two separate estates, 100% Barossa Valley grown. The Binder family ‘Chri-Ro’ vineyard on Stelzer Road features gravelly loam vineyards with some patches of sandy loam. The other source is our ‘Riedl’ vineyard at Vine Vale which comprises of light sand over clay.

THE VINTAGE:
After reasonable winter and spring rainfall, soil moisture was adequate during the 2018 growing season and the Barossa’s vineyards were exhibiting healthy canopies heading into summer. Jan and Feb were warm and dry, allowing good flavours to develop during the ripening period. The warm, dry Summer extended throughout the harvest season until the end of April. Overall yields were 10-20% down, but quality high.

THE WINEMAKING:
Small batches of Chardonnay are picked and carefully processed through a tank press with some skin contact. The free-run juice commences fermentation in stainless steel. A portion of juice from each vineyard is fermented and aged in new as well as seasoned French oak puncheons for
6 months, imparting a variety of complexities and more subtle oak treatment. The wine was aged on lees then blended, and finally bottled in February 2019.

ANALYSIS:
Alc. Vol 13.5%, Acidity 6.4 g/l, pH 3.29

THE PROFILE:
The wine has aromas of soft white peaches with hints of tropical fruits. The oak maturation has added a lovely soft edge and depth of palate while remaining balanced with the fruit details – peaches and cream characteristics.

CELLARING:
Made to drink young and fresh, but could be aged for up to 10 years.
